Chilled Cucumber Zucchini Soup

Blend:

1/2 large cucumber, peeled & diced into chunks

2 medium zucchinis, diced into chunks

1/2 medium yellow onion

1/4 cup parsley

2 cups baby kale

1 cup arugula

3/4 cup unsweetened almond milk

1/4 cup white wine vinegar

1/4 veggie stock

1/4 tsp ground mustard seed

1 tsp. Himalayan salt

Pepper to taste

This chilled soup is the perfect start to any meal. It is so refreshing and gives you an extra greens boost. This soup was inspired by my Belgian aunt who made it for us when my sister had her baby girl. Needless to say the soup was gone within 24 hours!
