Elevated Basic Breakfast



2 pasture-raised eggs

1/2 cup cooked sweet potatoes (mashed or diced)

3 cups greens (I love curly kale with my eggs, the texture holds so well!)


1. In a pan sauté your greens with some EVOO and if you have any garlic throw it in there! 

2. Heat up your potatoes on the side of the pan or in the oven. 

3. Cook 2 eggs your favorite way. 

4. Spread your greens out on a plate our bowl and place your eggs and sweet potaters on top. Season with a little Himalayan salt and pepper & eat it up! 

Pro Tip:

Add 1/4 of an avocado for some extra healthy fats!

Whenever I have sweet potatoes left over this is my go-to breakfast. It has just the right amount of sweetness so I’m not missing pancakes or bread, with lots of fiber (from the greens & sweet potatoes) to help keep you full!
