Greek Yogurt Chicken Salad

Makes: 5 cups Serving size: 1 cup

ingredients

3 cups shredded chicken (like from rotisserie or crock pot) 

1/4 cup avocado oil mayo

1 cup whole milk Greek yogurt

1 Tbsp. dijon mustard

1 Tbsp. apple cider vinegar

1/4 tsp. garlic powder

1/4 tsp. onion powder or dice 1/2 onion

1/4 tsp. Himalayan or sea salt

Pepper to taste

Optional to add in herbs like tarragon, diced celery, and or chopped nuts!

directions

1. Mix all ingredients except for the chicken in a large bowl.  

2. Add the chicken mix well & enjoy!

This is such a great high protein lunch option when you’re short on time or to prep for the week!
