Green Sauce

Ingredients

2 cups of any fresh green/herb (can be spinach, kale, arugula, or a mix + any herbs)

3 cloves of garlic 

1 Tbsp. nutritional yeast (this gives it a little cheese flavor without the parm!)

1/4 cup cashews (if you are avoiding cashews or have an allergy use 1/4 avocado here)

1 Tbsp. lemon juice 

1/4 tsp. Himalayan salt

1/8 tsp. pepper 

1/4 cup extra virgin olive oil (EVOO)*

Veggie stock as needed for the rest of the liquid (as needed depending on the desired thickness)*

*Note you can always use more veggie stock and less EVOO

DIRECTIONS

1. Place all ingredients into a blender or food processor. Blend until smooth. I typically use my small NutriBullet here and it works great!

2. Add in more veggie stock as needed to reach desired consistency. I usually don't add too much extra since I like it thick & creamy!

I love the diversity of this sauce. I tend to use different greens and herbs (whatever is in our fridge) each time so it's like having a new delicious topping every time! It's also a great way to get in more greens each day! My favorite foods to put it on are edamame pasta, salmon, shrimp, chicken, eggs, potatoes & cauliflower.
