Open-Faced Avo Tuna Fish Sandwich

Ingredients

1, 5 oz. can of no salt added, in water chunk light tuna fish. Chunk light tuna has the least amount of mercury than other canned tuna fish.

1/2 avocado

Juice of 1/2 lemon

2 tsp. dijon mustard

1/2 cucumber, sliced

1/8 cup pickled onions

1/2 cup arugula

1/8 tsp. Himalayan salt

1/8 tsp. pepper

1- 2 slices whole grain bread

directions

1. In a small bowl add lemon juice, avocado, dijon mustard, salt & pepper. Mash the avocado and mix well together with a fork. 

2. Drain the canned tuna fish and add to the bowl. Mix well. 

3. On each slice of whole grain bread place 1/2 the arugula, 1/2 sliced cucumbers, then add 1/2 the avocado tuna fish and top with pickled or regular red onions. 

PRo tip:

Prepare ahead of time without the avocado and then mix in day of so it doesn’t brown.

Whipping up a quick & easy lunch has become a must in our household. This tuna fish sandwich brings all the flavor with added nutrients and less saturated fat (from added mayo).
