Smoked Salmon Sweet Potato Toasts

ingredients

2 lengthwise baked sweet potato toasts 

1 Tbsp. Kite Hill chive cream cheese style spread

2 oz. (slices) wild-caught smoked salmon

1/4 avocado, sliced

Red onion slices or pickled onions

1, pasture raised 6-minute egg

Hank Sauce or you favorite hot sauce to top

directions

1. Preheat oven to 400˚F. Prepare a baking sheet and line with parchment paper. 

2. Slice a sweet potato lengthwise into 1/2-inch toasts (you should get about 4-5 rounds out of 1 sweet potato). Dress the rounds lightly with avocado oil and place on the pan and into the oven for 20 minutes then flip and bake for another 20 minutes or until lightly browned on each side. 

3. While the sweet potato toasts are baking, make your 6-minute egg.

5. When the sweet potato toasts are done, take two and pile the ingredients on in the order listed above & enjoy!

If you haven’t tried a sweet potato toast, it’s a must. It offers you so many more nutrients than bread, let alone just being more flavorful. This particular toast combines all my favorite breakfast items: smoked salmon, cream cheese, sweet potatoes, eggs, and avocado. I promise it won’t disappoint. It’s perfect when hosting a brunch. Just bake the sweet potatoes and then display all the toppings so everyone can build their own toast!
